Description

Namul, or dried or fresh vegetables or herbs that are eaten after being blanched and seasoned, is well-loved by Koreans. After a good hike, Koreans love having sanchae, or wild vegetable bibimbap made with various namul, in one of the many restaurants lined up at the bottom of the mountain. Add to that a bowl of makgeolli, the Korean fermented alcoholic drink made from rice, and you have yourself a perfect Korean ending to a great day outdoors.

Sanchae bibimbap is cooked rice topped with generous portions of blanched and lightly seasoned namul, grown and gathered in the mountainous region, a drizzle of perilla or sesame seed oil, a spoonful of gochujang, and a fried egg, and eaten by mixing everything. Like those with raw beef or abalone, the luxurious kinds of bibimbap are, of course, good, but the down-to-earth sanchae bibimbap is a dish truly loved by Koreans.

Dried namul, often unfamiliar to western tables, has long been an essential ingredient in Korea, a food that provided needed nutrients during hard times. More and more evidence is coming out that they are more nutritious than they were thought to be.

Based in the famously picturesque Gurye, Jeollanam-do, Uncle Gurye brings dried namul that is hard to come by in the city, packaged in small one to two servings. KIMโ€™C MARKET brings you five kinds of namul bibimbap that are good for the body and the soul. As you open the packages, you will be amazed at the distinct aroma of each of the five namul.

A perennial herb called aster yomena, or ssukbujaengyi in Korean, is Uncle Guryeโ€™s prize product, personally farming the namul for production. It contains various nutrients and large amounts of dietary fiber and is known to alleviate fever and have detox effects. Its unique scent can be calming and blends well with other ingredients.

Feel like having sanchae bibimbap? Toss in a bag when youโ€™re making rice, and you can be instantly transported to the foot of Mt. Jirsan, enjoying a rice bowl full of aromatic wild vegetables.

Namul Bibimbap Chwi (Chwinamul 33%, radish, carrots, pumpkin, mushrooms) 15 g: Chwinamul is an Asteraceae family plant with serrated leaves, mainly growing in Korea, China, and Japan. Young leaves are harvested and eaten in spring as namulmuchim (seasoned namul) or ssam, and their distinct strong flavor is excellent for stimulating your appetite. It is rich in vitamin A.

Namul Bibimbap Mucheong Shiraegi (Mucheong shiraegi 47%, radish, carrots, mushrooms) 15 g: Mucheong shiraegi is dried radish leaves and stems, which are called โ€œmucheong.โ€ Supple green leaves are lightly blanched in saltwater then dried in a well-ventilated shade. It is rich in vitamins and minerals, as well as dietary fibers. Itโ€™s a popular ingredient for doengangguk, namulmuchim, and stews.

Namul Bibimbap Ssukbujaengyi (Ssukbujaengyi 38%, radish, carrots, mushrooms) 13 g: Part of the Asteraceae family, this wild crop is most often eaten fresh in spring and as dried namul in autumn and winter. Loaded with vitamins, especially A and C, calcium, and phosphorus, it also contains large amounts of dietary fiber.

Namul Bibimbap Mulberry Leaves (Mulberry leaves 33%, radish, carrots, pumpkin, mushrooms) 15 g: Second only to soybeans, mulberry tree leaves have one of the highest protein content among plants. Korean herbal medicine uses everything from the leaves, stems, and roots of the mulberry tree for its medicinal properties. The leaves are well known to aid with blood circulation and promote healthy blood.

Namul Bibimbap Gondre (Gondre 38%, radish, carrots, mushrooms) 13 g: Growing in the deep mountainous area and gathered between May and June, gondre was named after a word that describes a dead drunk from how it sways about in the wind. Rich in vegetable protein, Koreaโ€™s representative namul is used in diverse ways in various dishes. It contains lots of calcium, phosphorus, iron, beta-carotene, and folic acid, so itโ€™s no wonder it has many health benefits, such as aiding bone health and being good for anemia, as well as proving to neutralize liver toxicity.
