Jinmatgim uses only top-grade laver grown in the clean waters of Korea's West Sea, hand-selected by a maker of thirty years, and it makes up more than 90% of each sheet. Start with laver this good and the seaweed's own flavor and aroma carry the snack, with little need to cover anything up.

Fresh sesame oil, roasted clean

Each batch is brushed with sesame oil pressed fresh on the day it's made, then roasted with care until the sheets are thin and crisp. Done right, the oil never pools or turns the gim greasy — what you get is real, clean crunch and a light, nutty finish rather than a slick of oil and salt.
