A hand-pulled green noodle called Suyeon 32
The name says how it's made. Suyeon means the noodles are stretched by hand, and 32 is the hours it takes to finish a batch. Instead of drying the strands fast under high heat, master artisan Song Cheolsu ages them slowly, in eight separate rounds, each one read against that day's temperature, humidity, and weather. As the noodles rest, the tiny pockets where water once sat close up, so the strand grows denser and springier. What you get is a medium-bodied noodle, about half again as thick as a standard somyeon, and that little extra heft is the point: it cooks in minutes yet stays springy, resists going soft or bloated, and gives off little starch, so it finishes clean with no raw-flour smell. Look closely and you can see the gamtae, embedded like little dots in every strand.
Gamtae from the Seosan flats
The green is gamtae, a fine, soft sea vegetable — a kind of green laver — that grows on the clean tidal flats of Seosan, on Korea's west coast, and is gathered by hand only in the cold months from December to March. Its Korean name means "sweet seaweed," and that's the character it lends: a gentle, briny-sweet note and a whisper of the sea, never strong or fishy. Song Cheolsu, named a gamtae master by the city of Seosan, is the only person in Korea to hold a patent for processing it.
How to enjoy it
Bring about four cups of water to a boil, add 100g of noodles per person, and cook for four and a half to five minutes, then rinse two or three times in cold water and drain well. The pale-green strands are loveliest in simple settings: in a clear, light broth the way you'd serve janchi-guksu, chilled with a soy-and-vinegar dipping sauce in summer, or tossed as bibim-guksu. They also take beautifully to Western treatments — dressed like a delicate aglio e olio with good olive oil and garlic, or served cold as a noodle salad — where the sea-green color and gentle flavor do the work on their own.

'수연'은 손으로 늘여 뽑았다는 뜻이고, '32'는 한 판을 완성하는 데 걸리는 시간, 32시간을 말하죠. 높은 온도에서 빨리 말리는 대신, 송철수 명인은 면을 천천히 숙성시켜요. 그날의 온도와 습도, 날씨를 살펴 가며 여덟 번에 나눠서요. 면이 쉬는 동안 물기가 있던 자리가 촘촘히 메워지면서, 면발은 더 단단하고 탄력 있게 여물고요. 그렇게 나온 면은 소면보다 1.5배쯤 도톰한 중면이에요. 그 약간의 두께가 핵심인데, 금방 삶기면서도 쉽게 붇거나 퍼지지 않고, 삶아도 전분기가 적어 뒷맛이 깔끔하죠. 밀가루 냄새도 없고요. 가까이 들여다보면 감태가 점점이 박혀 있는 게 보입니다.
서산 갯벌에서 온 감태
그 초록은 감태예요. 파래과의 여리고 부드러운 바다 나물인데, 서해안 서산의 깨끗한 갯벌에서 자라죠. 12월부터 3월, 추운 겨울에만 손으로 뜯어 냅니다. 감태(甘苔)라는 이름은 '단 김'이라는 뜻인데, 맛이 정말 그래요. 짜거나 비린 게 아니라, 은은하게 달큰하고 바다 향이 살짝 도는 정도죠. 감태를 살려 낸 송철수 명인은 서산시가 지정한 감태 명인이자, 국내에서 유일하게 감태 가공 특허를 가졌습니다.

물 네 컵 정도를 끓여 1인분 100g을 넣고 4분 30초에서 5분간 삶은 뒤, 찬물에 두세 번 헹궈 물기를 잘 빼세요. 연둣빛 면은 단순하게 낼수록 예뻐요. 맑은 장국에 말아 잔치국수처럼, 여름엔 차갑게 간장식초 소스에 찍어, 또는 비빔국수로 무쳐도 좋고요. 좋은 올리브유와 마늘로 알리오 올리오처럼 담백하게 볶거나, 차갑게 국수 샐러드로 내도 잘 어울려요. 바다빛 초록과 은은한 맛이 알아서 제 몫을 하거든요.
About
Badasoop is a family seaweed company on the west coast of Korea, in Seosan, South Chungcheong. It began with Song Cheolsu, who spent decades turning gamtae — a delicate green seaweed once left in the tidal flats — into a prized ingredient, and in 2015 was named the country's first and only master of gamtae processing by the city of Seosan; he holds Korea's only patent for the craft. Today his daughter carries the family work into its second generation, bringing gamtae to a wider table. Badasoop harvests and makes its seaweed in its own HACCP-certified facility in Seosan, and that gamtae has found its way into Michelin kitchens in Korea and abroad and onto department-store shelves overseas.
바다숲은 한국 서해안, 충남 서산에서 대를 이어 해조류를 만드는 가족 기업이에요. 시작은 송철수 명인이었죠. 갯벌에 그냥 버려지던 여린 바다 나물, 감태를 귀한 식재료로 살려 낸 분이고, 2015년 서산시가 지정한 국내 최초이자 유일한 감태 가공 명인이거든요. 감태 가공 특허도 국내에서 유일하게 가지고 있고요. 지금은 딸이 그 뒤를 이어 2대째 감태를 더 많은 식탁에 올리고 있습니다. 서산의 HACCP 인증 공장에서 직접 감태를 채취하고 만들죠. 그렇게 만든 감태는 국내외 미쉐린 주방과 해외 백화점 매대에 소개되고 있습니다.
