Highlights
The same Seosan gamtae, this time worked into a thick, chewy udon. Master artisan Song Cheolsu's gamtae is kneaded into the dough, and the noodles are hand-pulled and slow-aged over thirty-two hours, in eight patient rounds, so each thick strand turns springy and flecked with green, with none of that raw-flour smell. Serve them hot in a steaming broth or cold with a dipping sauce, and the sea-green strands take to either.
Ingredients: Wheat flour 95.5% (U.S.), refined salt 3%, gamtae powder 1% (Korea), cottonseed oil 0.5%
Purity check: No artificial colorings or dyes — the green comes only from gamtae
Process: Hand-pulled and slow-aged over 32 hours, repeated through 8 aging rounds
Certifications: HACCP
Net weight: 400g (14.1 oz) total — two 200g (7.05 oz) packs, about 4 servings
Storage method: Keep in a cool, dry place
Allergens: Contains wheat
Good to know: Thick noodle, about 4mm; made with plant ingredients only (no animal ingredients)
Description
A hand-pulled udon called Suyeon 32
Like the somyeon it shares a name with, this udon is stretched by hand and finished slowly — thirty-two hours to a batch, aged in eight separate rounds rather than dried fast under heat. The payoff is in the bite: a thick strand that stays firm and springy, chewier than a factory udon and clean on the palate, with no raw-flour smell. Gamtae runs all through it, flecked green like little dots in the noodle.
The gamtae in the strand
The green is gamtae, a fine, soft sea vegetable — a kind of green laver — gathered by hand from the clean tidal flats of Seosan, on Korea's west coast, in the cold months from December to March. Its Korean name means "sweet seaweed," and that's what it brings: a gentle, briny-sweet note and a light scent of the sea, never strong or fishy. It comes from Song Cheolsu, named a gamtae master by the city of Seosan and the only person in Korea to hold a patent for processing it.
How to enjoy it
Bring about four cups of water to a boil, add 100g of noodles per person, and cook for fifteen to eighteen minutes, then rinse in warm water and drain. Serve them hot in a savory anchovy-and-kelp broth with your favorite toppings, or cold in summer with a soy dipping sauce, zaru style. They're also excellent stir-fried into a quick yaki-udon with vegetables, or treated like a fresh pasta, where the chew and the sea-green color carry the dish.
About
Badasoop is a family seaweed company on the west coast of Korea, in Seosan, South Chungcheong. It began with Song Cheolsu, who spent decades turning gamtae — a delicate green seaweed once left in the tidal flats — into a prized ingredient, and in 2015 was named the country's first and only master of gamtae processing by the city of Seosan; he holds Korea's only patent for the craft. Today his daughter carries the family work into its second generation, bringing gamtae to a wider table. Badasoop harvests and makes its seaweed in its own HACCP-certified facility in Seosan, and that gamtae has found its way into Michelin kitchens in Korea and abroad and onto department-store shelves overseas.

01 · OUR CRAFT
Made By Hand, Not By Machine
Every jar and bottle comes from master artisans and small family producers across Korea, not a factory line. They still ferment in traditional earthenware, age for months or even years, and follow methods passed down through generations, the same way it's always been done.

02 · OUR PROOF
Recognized By Chefs, Not Just Labels
Our producers hold official heritage titles and food-safety certifications that aren't handed out easily. Many have been featured by international media and praised by Michelin-starred chefs around the world, proof that real craftsmanship gets noticed, not just claimed on a label.

We started Kim’C Market because getting real Korean groceries in the U.S. was nearly impossible—unless you stuffed your suitcase on the way back from Korea. You deserve more than what’s on the shelves at generic supermarkets.
Frequently Asked Questions
How soon will I receive my package?
We ship out orders only in the US, no later than
two business days after the balance on your order has been processed.
Delivery is made 1-3 days from date the label is created with selected
carrier service.
How do you source?
With our mission to improve people’s health by
providing premium Korean foods, Kim’C Market only offers the best
quality food from the finest producers in Korea. All of our offerings
have passed 12 internal criteria including taste, producer’s reputation,
sourcing of ingredients, and brand philosophy.
Sell by date
Every food product at Kim'C Market with less than 3 months to the sell by dates announce the date in the title page.
As a small company focusing on the best customer experience and
transparency, Kim'C Market is putting a weight on sharing information on food and correcting myths instead of asking producers to print later dates. (Fact: producers put a lot shorter dates than the lab tests suggest because they can't control the storage and distribution.) Sell by date doesn't mean the food is bad after the date or not edible. It especially doesn't reply to fermented foods - i.e. wouldn't you value aged kimchi or 5 years fermented doenjang? Please read our blog: Understanding Best-By Dates. We will continue to make efforts to educate our members and contribute to anti-global warming efforts.
