Jeolla-do, situated in the southern part of Korea, distinguishes itself with a rich culinary tradition. This region, known for its abundant ingredients, particularly utilizes fish sauce and salty fish, resulting in a thick and flavorful kimchi sauce. The addition of fish broth enhances the umami profile of the kimchi, a distinctive characteristic attributed to the region's access to fresh seafood from the Southern Sea and an abundance of seasonal vegetables in the warmer climate.
Cabbage Kimchi 포기김치
Cabbage kimchi is the kimchi most people are familiar with, and for good reason as it’s the most commonly eaten! HaeDamChon's rendition adds a special touch to this cherished dish. Using cabbage sourced from Gangwon-Do during the summer and Haenam in the winter, each batch is tailored to the best seasonal produce. Gangwon, with its mountainous terrain, maintains a cool temperature, even in the summer, while Haenam's warmer southern climate allows for cabbage cultivation even in winter.
For the three year brining and seasoning process, HaeDamChon employs the finest sea salt from the Shinan region, extracting bitterness as it ferments and ages. The kimchi is then enriched with a generous serving of a housemade marinade of salted fish, shrimp, and yellow croaker. This combined with a secret broth results in HaeDamChon's distinctive and delicious kimchi sauce.
