DESCRIPTION

A Culinary Bridge Across 5,000 Years
In 1991, archaeologists discovered 5,000-year-old rice seeds in Gawaji Village, proving that the Goyang region has been the gold standard for rice since the dawn of Korean civilization. Gawaji was born to honor this legacy. Grown in the same mineral-rich alluvial plains along the Han River, this rice thrives in a perfect microclimate of natural humidity and nutrient-dense soil. The result? A grain with a pearlescent glow and a velvety finish that elevates a simple bowl of rice into a gourmet experience.

The Science of the "Golden Ratio" Chew
What makes Gawaji truly special is its low amylose content (approx. 8.2%). In the world of rice, lower amylose means higher stickiness and a softer texture. While standard white rice can feel dry or harden quickly, this unique medium-glutinous (semi-sticky) variety retains its moisture for hours. It offers a bouncy, elastic bite that remains tender even after it cools—making it the absolute best choice for Gimbap, lunchboxes, or children's rice balls.

Chef’s Tip: The Joy of Fresh Milling
At Kim’C Market, we treat rice like freshly roasted coffee. We mill your Gawaji the moment your order is placed to ensure the natural oils and floral aromas are perfectly preserved.

Ideal Rice Cooker Ratio: Use 1 cup of rice to 0.9–1 cup of water (adjust to preference). Because Gawaji is naturally moist, using slightly less water than usual helps you experience its distinct, bouncy texture.
Effortless Cooking: Its superior water absorption means you can skip the long soaking process and still get a perfect, glossy pot of rice every time.

ABOUT

At KIM’C MARKET, we believe that the best rice is the one most recently touched by the mill. To ensure you experience the peak flavor of the harvest, we bypass the long shelf-life of pre-packaged commercial rice. Instead, we mill your Gawaji in New York only after your order is placed. This "Just-in-Time" approach is the only way to preserve the delicate aroma and moisture of a grain grown in such a special environment.

Gawaji is a premium variety born from a collaboration between Goyang City and the Gyeonggi Agricultural Research Institute, emphasizing both food safety and environmental stewardship. By working with farmers who prioritize responsible farming and strict agricultural quality controls, we ensure that the land remains healthy while delivering the cleanest, most flavorful rice to your table. Experience the perfect harmony of Goyang’s historic terroir and Kim’C Market’s fresh-milling technology.

Handcrafted In Small, Limited Batches

01 · OUR CRAFT

Made By Hand, Not By Machine

Every jar and bottle comes from master artisans and small family producers across Korea, not a factory line. They still ferment in traditional earthenware, age for months or even years, and follow methods passed down through generations, the same way it's always been done.

02 · OUR PROOF

Recognized By Chefs, Not Just Labels

Our producers hold official heritage titles and food-safety certifications that aren't handed out easily. Many have been featured by international media and praised by Michelin-starred chefs around the world, proof that real craftsmanship gets noticed, not just claimed on a label.

About Us:

At Kim’C Market, our mission is to introduce a better, more authentic culinary experience—by offering premium Korean food products that are healthy, tasty, and thoughtfully sourced.

We started Kim’C Market because getting real Korean groceries in the U.S. was nearly impossible—unless you stuffed your suitcase on the way back from Korea. You deserve more than what’s on the shelves at generic supermarkets.

Sell by date

Every food product at Kim'C Market with less than 3 months to the sell by dates announce the date in the title page.

As a small company focusing on the best customer experience and
transparency, Kim'C Market is putting a weight on sharing information on food and correcting myths instead of asking producers to print later dates. (Fact: producers put a lot shorter dates than the lab tests suggest because they can't control the storage and distribution.) Sell by date doesn't mean the food is bad after the date or not edible. It especially doesn't reply to fermented foods - i.e. wouldn't you value aged kimchi or 5 years fermented doenjang? Please read our blog: Understanding Best-By Dates. We will continue to make efforts to educate our members and contribute to anti-global warming efforts.
