Highlights

GAIA's anchovy sauce comes down to two ingredients and time: first-catch South Sea anchovies, three-year-aged Shinan salt, and three years of slow fermentation in breathable onggi (earthenware jars). No water to stretch it, no heat to rush it — just fish and salt breaking down into a rich, rounded, faintly sweet umami. It's the quiet backbone of the Korean kitchen, deepening soups, stews, and kimchi without ever masking a dish or turning it fishy.

Description

Anchovy sauce, fermented in onggi

GAIA's anchovy sauce keeps its ingredient list to two: first-catch anchovies from Korea's South Sea and sea salt from Sinan that has been aged three years. The two ferment together for three years in onggi, the breathable Korean earthenware that lets a sauce develop slowly. Given that much time, the anchovy proteins break down completely — and that's what you taste. Instead of the thin, sharp saltiness of a mass-market fish sauce, this one is deep and full, rounded and mellow, with a faint natural sweetness and a long savory finish that reads clean rather than fishy. There are no preservatives, colors, or additives anywhere in it.

How to enjoy it

In Korean cooking, a lot of the depth quietly comes from fish sauce. Salt only makes a dish salty; fermented anchovy adds the savory umami you'd otherwise have to coax out of a long simmer. Use it the way a Korean kitchen does: a small splash to deepen the broth of a soup or stew, and the savory base that gives kimchi — especially watery, brothy kinds — its backbone. It's excellent in miyeokguk (seaweed soup), in the brine for ganjang-gejang (soy-marinated crab), and in jangajji (pickles). Beyond Korean food, it works like any good fish sauce: a few drops in a dipping sauce for Vietnamese spring rolls, a dressing, or a braise. It seasons cleanly, so add it gradually and taste as you go.

About

GAIA is an agricultural corporation in Nonsan, Chungcheongnam-do, led by Kim Dong-hwan, and fermentation runs through everything it makes. On one side it develops fermentation-based seasonings, including a low-sodium technology recognized with a government New Technology (NET) certification. On the other, it keeps to the oldest methods, aging fish sauce, eoganjang, and doenjang slowly in breathable onggi. This anchovy sauce comes from that traditional line — only domestic anchovies and salt, earthenware jars, and three years of time.

01 · OUR CRAFT

Made By Hand, Not By Machine

Every jar and bottle comes from master artisans and small family producers across Korea, not a factory line. They still ferment in traditional earthenware, age for months or even years, and follow methods passed down through generations, the same way it's always been done.

02 · OUR PROOF

Recognized By Chefs, Not Just Labels

Our producers hold official heritage titles and food-safety certifications that aren't handed out easily. Many have been featured by international media and praised by Michelin-starred chefs around the world, proof that real craftsmanship gets noticed, not just claimed on a label.

About Us:

At Kim’C Market, our mission is to introduce a better, more authentic culinary experience—by offering premium Korean food products that are healthy, tasty, and thoughtfully sourced.

We started Kim’C Market because getting real Korean groceries in the U.S. was nearly impossible—unless you stuffed your suitcase on the way back from Korea. You deserve more than what’s on the shelves at generic supermarkets.

Sell by date

Every food product at Kim'C Market with less than 3 months to the sell by dates announce the date in the title page.

As a small company focusing on the best customer experience and
transparency, Kim'C Market is putting a weight on sharing information on food and correcting myths instead of asking producers to print later dates. (Fact: producers put a lot shorter dates than the lab tests suggest because they can't control the storage and distribution.) Sell by date doesn't mean the food is bad after the date or not edible. It especially doesn't reply to fermented foods - i.e. wouldn't you value aged kimchi or 5 years fermented doenjang? Please read our blog: Understanding Best-By Dates. We will continue to make efforts to educate our members and contribute to anti-global warming efforts.
