Highlights
Soft and chewy under a coat of nutty roasted soybean powder, with a quiet bitter note at the center, Seoga's bellflower jeonggwa tastes remarkably like Korean injeolmi rice cake. Thick, bite-size pieces of bellflower root are cooked for 100 hours at shifting temperatures, then rolled in Korean soybeans the company roasts and grinds in its own kitchen. Loved by young and old alike, it makes a thoughtful little thank-you gift.

Description
Jeonggwa, the candied root of the Korean table
Jeonggwa are roots or fruits cooked slowly in honey or syrup until chewy and glossy, a traditional Korean confection long a fixture of holiday and celebration tables. Bellflower root, doraji, is the classic choice: pale, fibrous, and gently bitter when raw, it turns tender and sweet as it cooks. Seoga's founder first made bellflower jeonggwa as an after-dinner treat for guests at her Gyeongju restaurant, and this soybean-dusted version has become one of the brand's most popular.
Thick roots, roasted beans
Seoga chooses thick bellflower roots with few fine rootlets, which hold more of the root's aroma and flavor. After trimming, the pieces go through the company's five-step method, cooked over 100 hours at high, low, and medium temperatures, so they come out evenly chewy. The coating is just as deliberate: Korean white soybeans are roasted in Seoga's kitchen and ground right away, so the powder stays fresh and fragrant. The result is nutty and soft on the outside, chewy within, with the root's faint bitterness lingering at the finish.
How to enjoy it
Serve a few pieces on a small plate with roasted barley tea, green tea, or a cup of black coffee. On a cheese board they sit well beside aged gouda, manchego, or a creamy brie, and they pair surprisingly well with a glass of off-dry riesling or an amber sherry. Chop a piece or two over vanilla ice cream or a bowl of Greek yogurt with honey for a quick dessert.
About
Seoga was founded in 2017 in Gyeongju, the thousand-year capital of the Silla kingdom, and became an agricultural corporation in 2019. Its founder, Yeom Mi-sook, ran a restaurant at the foot of Chisullyeong in Gyeongju for 25 years while studying Korean cuisine, tea, temple food, and the dishes of the royal court. The bellflower jeonggwa she served her guests after their meals became the beginning of the company. Seoga's motto is to carry on the heart of the royal kitchen: Korean ingredients chosen to strict standards, a five-step method of its own, and 100 hours of patient work, with no artificial colors. Its products are made in a facility that maintains HACCP and ISO 22000 certification, and in 2022 Seoga was selected for K-FOREST FOOD, Korea's national brand for forest-grown food.
