โ€œPeople these days donโ€™t know how yakgwa is made.ย  The traditional recipe calls for flour, honey, sesame oil, and add rice wine to ferment, then deep-fry in 160~170 celsius.ย  Yakgwa, traditionally, was a sweet dessert for special occasions.ย  But nowadays,ย  yakgwa is easily available and common.ย  I wanted to special yakgwa to give back its glory.ย  I experimented with many ingredients and loved mixing dried persimmon in the yakgwa dough.ย  It made yakgwa more chewy, soft, and gave it a unique flavor.ย  Itโ€™s been 15 years since I came up with this recipe.ย  Sangju dried persimmon has a long history as well - itโ€™s known for high quality and used to be offered to the Kings.ย  Now with this special ingredient, my persimmon yakgwa became local favorites.โ€

Yakgwa, honey cookie, is one of the most beloved Korean traditional desserts.ย  It is typically enjoyed during the holidays or special occasions with family and friends gathering.ย  Perhaps because it has been around for such a long time, nowadays, yakgwa has lost its value.ย  Kimโ€™C Market wondered if there was a special yakgwa producer and found Myeong Sil Dangโ€™s persimmon honey cookie in Sangju, Kyeongbuk-Do.

Sangju is a mountainous region with a big daily temperature range, which is a perfect condition to make dried persimmon.ย  The sweet dried persimmon from Sangju is mixed in to make yakwa.ย  The persimmon not only gives a sweet flavor, but also gives a chewy and soft texture to yakgwa.ย  What a great combination!ย  And the sweet, clean flavor of this persimmon yakgwa will convert the first-timer and the older timer to ask for more of it!
