Suyeon somyeon means noodles pulled by hand, never cut by machine, and that discipline defines everything about this noodle. Myeon Ga Won kneads and stretches its dough through twelve careful steps and eight rounds of resting — a process that runs close to twenty-eight hours from start to finish — drawing the wheat out into threads as fine as silk. The recipe stays deliberately spare: wheat flour, purified water, and refined salt, nothing more, because dough worked this thoroughly needs no help from anywhere else. The patience shows in the bowl — the noodles stay resilient and distinct rather than clumping, without the raw-flour smell that thinner noodles can carry, just a clean, silky bite.

One dough, four expressions

Every variety begins with the same base dough, then takes on its own character. Original is the purest expression — plain, delicate, and quietly refined. Buckwheat folds in buckwheat powder for a nuttier, firmer bite. Mugwort adds a faint herbal green note, along with its color. Black rice deepens both the color and the flavor, finishing with a faint nutty edge. All four keep the same fine, springy bite — the choice comes down to the mood of the table.

How to enjoy it

Bring water to a rolling boil and cook the noodles for about two and a half minutes, then rinse them thoroughly in cold water so they firm up and stop cooking. From there, simplicity serves them best. Serve them in a warm anchovy broth for janchiguksu, Korea's everyday noodle soup, or toss them cold in a sweet-spicy gochujang (Korean red chili paste) sauce for bibimguksu. At their plainest, and perhaps their best, they need only a touch of perilla or sesame oil, a pinch of salt, and a scatter of sesame seeds, finished with a sliced egg, some vegetables, and toasted seaweed. Their fineness also lends itself naturally to a cold sesame noodle salad, standing in for angel-hair pasta with considerably more character.

손으로 뽑는 느린 방식

수연소면은 기계로 자른 게 아니라 손으로 늘여 뽑은 국수이며, 그 원칙이 이 면의 모든 것을 결정합니다. 면가원은 반죽을 열두 단계에 걸쳐 치대고 늘이며, 그 사이 여덟 번을 숙성시킵니다. 시작부터 끝까지 꼬박 28시간이 걸리는 과정이죠. 그렇게 밀을 비단결처럼 가늘게 뽑아냅니다. 재료도 밀가루와 정제수, 정제 소금, 이 셋이 전부입니다. 이만큼 정성껏 다룬 반죽에는 다른 무엇도 필요하지 않으니까요. 그 정성은 그릇에서 그대로 드러납니다. 면이 엉기지 않고 탱글하게 살아 있으며, 가는 국수에서 이따금 나는 날밀가루 냄새도 없이 매끈하고 깔끔합니다.

한 반죽, 네 가지 표정

모든 종류는 같은 반죽에서 시작해, 저마다 다른 개성을 얻습니다. 오리지널은 가장 순수한 표정입니다. 담백하고 섬세하며 절제된 맛이죠. 메밀은 메밀분말을 더해 한층 구수하고 단단한 식감을 냅니다. 쑥은 은은한 풀향과 빛깔을 더하고요. 흑미는 색과 맛을 한층 깊게 만들어, 은은한 고소함이 남습니다. 네 가지 모두 가늘고 탱탱한 식감은 같아, 결국 그날 식탁의 분위기에 따라 고르시면 됩니다.

물을 팔팔 끓여 2분 30초가량 삶은 뒤, 찬물에 충분히 헹궈 면발을 탄탄하게 잡아 줍니다. 그다음은 단순할수록 좋습니다. 따뜻한 멸치 육수에 말아내면 한국의 대표적인 국수 요리, 잔치국수가 되고, 새콤달콤하고 매콤한 고추장 양념에 무치면 비빔국수가 되고요. 가장 소박하면서도 가장 맛있는 방식은, 들기름이나 참기름을 살짝 두르고 소금을 조금, 통깨를 뿌린 뒤 삶은 달걀과 채소, 구운 김을 곁들이는 것입니다. 면이 워낙 가늘어, 냉파스타 대신 참기름 향 은은한 국수 샐러드로 즐겨도 좋습니다.

About

Myeon Ga Won is widely regarded as the birthplace of Korean hand-pulled somyeon. Its founder, Master Kang Hee-tak, began making these noodles in 1975 and built the craft after losing the use of both hands, pulling wheat into thread-fine strands by a method he refined over decades. For years his somyeon was known mainly as a luxury gift and an export item, rarely seen on ordinary tables. Today the craft continues into its third generation, still made by hand and with only natural ingredients, honestly and without shortcuts. Choosing the slower path when an easier one exists — that is the craftsmanship Myeon Ga Won has carried forward, generation after generation.
