Highlights
Ladle warm anchovy broth over three colors of noodles in a wide, pale bluish-white bowl, and janchi-guksu, Korea's celebration noodle soup, is on the table at home. The noodles come from noodle master Kim Hyun-kyu of Grand Noodle, colored only by vegetables and slow-dried for about sixty hours, so they stay springy in hot broth. Soil Baker's Goun bowl is wide and shallow enough for a full serving with broth, and the maple chopsticks, finished in ottchil lacquer, feel warm in the hand. With the bowl and chopsticks included, it is a gift ready to serve a proper bowl of noodles the day it arrives.

Description
Three colors from three vegetables
Grand Noodle grinds a single vegetable into each dough: chives from Gajo in Geochang for green, sweet pumpkin from Jeonnam for gold, beet from Aewol on Jeju for rose. The color is simply the vegetable itself, kneaded into top-grade wheat flour with rice and sea salt. The dough is rewound again and again the old way, then the noodles dry slowly for about sixty hours in a low-temperature room. With no noodle improver, that patience is what gives them a springy bite that holds up in hot broth.
A bowl and chopsticks for every day
The Goun bowl from Soil Baker is wide and shallow, with soft curves and a pale bluish-white glaze. Fired at 1250°C, it is sturdy enough for daily use and goes into the dishwasher and microwave. It holds a full serving of noodles with broth, and it works just as well for bibimbap, a stew, or a salad. The maple chopsticks are finished in ottchil, the lacquer Korean craftsmen draw from the sap of the lacquer tree, which gives the wood a deep, smooth sheen and a warm feel in the hand.
How to enjoy it
Boil the noodles for four to six minutes, stirring now and then, and rinse in cold water. For janchi-guksu, Korea's celebration noodle soup, pour hot anchovy broth over the noodles and top with egg ribbons, zucchini, and a pinch of gim. On a warm day, dress them cold with sesame paste, soy sauce, and cucumber. They also toss well like pasta: a little olive oil, garlic, and grated Parmesan is all they need, and a drizzle of perilla oil with sea salt is the Korean version of the same idea.

In its gift sets, Kim'C Market brings the work of these makers together in a single, carefully composed box.
About Grand Noodle
Grand Noodle makes noodles by hand in Geochang, in the mountains of Gyeongsangnam-do. Noodle master Kim Hyun-kyu has been at the craft for more than forty years, and instead of powders or dyes he grinds whole seasonal ingredients such as sweet pumpkin, chives, and beet straight into a dough of wheat flour and sea salt. Most of the noodles are still made by hand in small batches, and under the Grand name the maker also offers the perilla oil, sea salt, and tsuyu to go with them.
