Gim, Korea's roasted laver, is the quiet workhorse of the everyday table. Badasoop's everyday version comes already roasted and seasoned, so there's nothing left to do to it. These are full-size sheets rather than small pre-cut squares, and they're roasted crisp enough that you can skip the scissors entirely: fold a sheet in half, then in half again, and it tears cleanly along the creases into whatever size you want, small pieces for the rice bowl or larger ones for wrapping.

Roasted sea salt that never turns salty

The salt is the detail that matters here. Badasoop uses domestic sea salt that's roasted before it goes on, which takes the harsh edge off, so the sheets taste properly seasoned without ever tasting salty, even eaten on their own. A little sesame oil rounds it out with a toasted, nutty note. There's nothing else in it, no artificial additives, which is why it's just as easy to eat by the sheet as a snack in place of chips.

How to use it

The most Korean way to eat it is the simplest: lay a sheet over a warm spoonful of white rice, or tear it into the bowl and let it soften. It's just as good on its own, a crisp, savory snack that goes faster than a bag of chips. From there it travels easily onto other tables. Crumble it over a rice bowl or soft scrambled eggs, scatter it across a green salad or a bowl of ramen, or press torn pieces onto buttered popcorn for something salty and unexpected.

김은 한국 밥상의 조용한 일꾼이에요. 바다숲 매일 김은 구워서 조미까지 되어 나오니 더 손댈 게 없죠. 작게 잘린 도시락 김이 아니라 전장 그대로고요. 아주 바삭해서 가위도 필요 없어요. 반으로, 다시 반으로 접으면 접힌 선을 따라 깔끔하게 잘리니, 원하는 대로 잘라 먹으면 됩니다.

볶은 천일염으로 구워 짜지 않아요

여기서 중요한 건 소금이에요. 바다숲은 국산 천일염을 먼저 볶아서 쓰는데, 볶으면 소금의 거친 맛이 부드러워져요. 그래서 간은 제대로 배어 있는데 맨입에 먹어도 짜지 않죠. 여기에 참기름이 고소한 향을 살짝 더해 풍미가 좋습니다. 다른 건 넣지 않았어요. 첨가물이 없으니 과자 대신 간식으로 한 장 두 장 집어 먹기에도 좋아요.

이렇게 즐기세요

가장 한국적인 방법은 제일 단순해요. 따뜻한 흰쌀밥 한 술에 김 한 장을 얹거나, 밥그릇에 뜯어 넣어 살짝 눅눅해지게 두는 거죠. 그냥 뜯어 먹어도 좋아요. 과자 한 봉지보다 빨리 없어지는 바삭하고 고소한 간식이거든요. 여기서 조금 더 나가면 서양식 식탁에도 잘 어울려요. 덮밥이나 부드럽게 익힌 스크램블드에그 위에 부숴 뿌리고, 샐러드나 라면 그릇에 흩뿌리고, 버터 팝콘과 함께 먹으면 짭조름하니 색다르죠.

About

Badasoop is a family seaweed company on the west coast of Korea, in Seosan, South Chungcheong. It began with Song Cheolsu, who spent decades turning gamtae — a delicate green seaweed once left in the tidal flats — into a prized ingredient, and in 2015 was named the country's first and only master of gamtae processing by the city of Seosan; he holds Korea's only patent for the craft. Today his daughter carries the family work into its second generation, bringing gamtae to a wider table. Badasoop harvests and makes its seaweed in its own HACCP-certified facility in Seosan, and that gamtae has found its way into Michelin kitchens in Korea and abroad and onto department-store shelves overseas.

바다숲은 한국 서해안, 충남 서산에서 대를 이어 해조류를 만드는 가족 기업이에요. 시작은 송철수 명인이었죠. 갯벌에 그냥 버려지던 여린 바다 나물, 감태를 귀한 식재료로 살려 낸 분이고, 2015년 서산시가 지정한 국내 최초이자 유일한 감태 가공 명인이거든요. 감태 가공 특허도 국내에서 유일하게 가지고 있고요. 지금은 딸이 그 뒤를 이어 2대째 감태를 더 많은 식탁에 올리고 있습니다. 서산의 HACCP 인증 공장에서 직접 감태를 채취하고 만들죠. 그렇게 만든 감태는 국내외 미쉐린 주방과 해외 백화점 매대에 소개되고 있습니다.
