Description
When onion dries, something good happens. The moisture leaves, the sharpness mellows, and what's left is a sweeter, more concentrated version of itself — with nutrients up to 5 to 10 times more potent than fresh. Mrs. Malangi dries each batch using far-infrared low-temperature drying, the same method that sun-drying is known to bring out the best in onion, without the heat damage of conventional electric dryers.
Rehydrate in water, squeeze out the moisture, season, and toss — and a side dish is done. Drop a handful into a jjigae or soup instead of fresh onion and notice the difference in texture and depth. Stir-fry with beef or glass noodles, fry lightly for vegetable tempura, or use straight from the bag as a topping like flakes. Try it in kimchi, or cook rice with dried onion on top for a subtly sweet, fragrant bowl.
