Highlights
Most pantries stop at one kind of soybean. A Korean kitchen keeps three, and each one earns its place. Golden baektae blends into the silky, chilled broth of summer kong-guksu and into fresh soy milk. Seoritae, harvested late after the frost, hides a jade-green kernel under its black skin and turns nutty in a pot of rice. Tiny yakkong simmers down glossy and sweet in soy sauce. Grown on small farms in the cool Gangwon highlands and packed bean by bean, it is a whole Korean bean pantry in one box.

Description
Three beans of the Korean table
Beans sit close to the center of Korean cooking, and each of these three has its own job. Baektae, the round yellow soybean, is the one behind tofu, soy milk, and the meju that becomes doenjang; at home it is ground into the chilled broth of kong-guksu, the summer noodle soup. Seoritae takes its name from seori, the Korean word for frost, because it is harvested late in the fall; cut one open and the kernel inside is green. Yakkong, also called the mouse-eye bean for its small, shiny shape, is the smallest of the three, with a dense bite and a gentle sweetness.
From the Gangwon highlands
The beans are grown by a small farmers' cooperative in Jeongseon, in the mountains of Gangwon-do, where cool air and wide swings between day and night temperatures slow the crop down. They are grown in small quantities rather than mass-produced, then packed by Kim'C Market into three bags so each bean can be cooked on its own. Simmered, baektae is mild and creamy, seoritae is firm and nutty, and yakkong keeps its shape with a deeper, slightly sweet flavor.
How to cook them
Soak the beans overnight before cooking. Stir a handful of seoritae into white rice for kongbap, or simmer it in soy sauce and a little syrup for kongjaban, the glossy black-bean side dish. Boil soaked baektae for about 15 minutes, then blend it with cold water and a pinch of salt for kong-guksu broth or a simple soy milk. Yakkong can be toasted in a dry pan until the skins crack for a crunchy snack. Outside the Korean kitchen, cooked seoritae works in grain salads and chili, and blended baektae makes a smooth, savory dip in the spirit of hummus.
