A jujube with a nut inside

Yugisaem's crispy jujube starts with a Korean jujube, pitted by hand, with a whole roasted nut set inside. The stuffed fruit is dried until crisp and sliced into thin rounds, so every slice shows a ring of jujube around a nut center. The almond version is sweet and toasty; the Brazil nut version is richer and creamier. Nothing is added beyond a touch of jujube concentrate: no sugar, no coloring, no preservatives. The method is Yugisaem's own, and it holds a Korean patent for it.

Korean nuts, grown clean

The other three nuts are chosen for where and how they are grown. The walnuts are Korean, grown without pesticides and certified as such, with the deep, slightly bitter richness of fresh walnuts. The pine nuts are organic Korean pine nuts from high mountain forests in Gangwon, peeled without boiling so they keep their delicate, buttery flavor. The cashews are organic, imported from Vietnam and roasted by Yugisaem in Korea until golden and gently sweet.

How to enjoy it

Set out a little of each in small bowls with tea, coffee, or a glass of wine. Crispy jujube slices are a natural on a cheese board, next to aged cheddar or manchego, and pine nuts can go straight into pesto, a salad, or a bowl of Korean pine nut porridge. Scatter walnuts and cashews over yogurt or roasted vegetables. Keep everything in the refrigerator or freezer once opened so the oils stay fresh.

견과를 품은 대추

유기샘의 바삭대추는 국산 대추의 씨를 손으로 빼고, 그 자리에 볶은 견과를 통째로 넣는 데서 시작합니다. 견과를 품은 대추를 바삭하게 말려 얇게 썰면, 단면마다 대추 고리 안에 견과가 박힌 모양이 나옵니다. 아몬드 바삭대추는 달콤하고 고소하고, 브라질너트 바삭대추는 한결 진하고 부드럽습니다. 대추농축액을 조금 더했을 뿐 설탕도, 색소도, 보존료도 넣지 않았어요. 유기샘이 직접 고안해 특허를 받은 방식입니다.

호두와 잣, 캐슈넛은 어디서 어떻게 자랐는지부터 깐깐하게 골랐습니다. 호두는 농약 없이 키워 무농약 인증을 받은 국산 호두로, 갓 깐 호두의 깊고 쌉싸름한 고소함이 살아 있습니다. 잣은 강원도 높은 산에서 거둔 유기농 국산 잣을 삶지 않고 속껍질을 벗겨 여리고 버터 같은 풍미를 지켰어요. 캐슈넛은 베트남산 유기농 캐슈넛을 유기샘이 국내에서 노릇하게 볶아 은은한 단맛을 냈습니다.
