Good to know: If the crispy jujube softens, ten minutes in the freezer brings back the crunch. In warm weather the dates may turn sticky and cling together, which is natural. Made by hand, so an occasional pit fragment may remain.

Crisp jujube, whole nut

Yugisaem's crispy jujubes begin with Korean jujubes, pitted by hand, each filled with a whole roasted nut. Dried until crisp and sliced into thin rounds, they show a ring of fruit around a nut center in every slice. The almond version is sweet and toasty, with a light snap; the Brazil nut version is richer and creamier. Only a touch of jujube concentrate is added, so the sweetness is the fruit's own. Yugisaem holds a Korean patent for the method.

Soft date, soybean dust

The almond dates offer the opposite texture. Instead of crisp jujube, they use Deglet Nour dates from Tunisia, a variety known for its honeyed, slightly translucent flesh, each stuffed with a roasted almond. The dates stay soft and chewy, and a dusting of toasted Korean soybean powder, the same nutty powder that coats Korean injeolmi rice cakes, gives them a familiar Korean finish.

How to enjoy it

Serve a few of each side by side with green tea, coffee, or a glass of red wine, from the lightest crunch to the softest chew. The crispy jujube slices are a natural on a cheese board beside manchego or aged gouda, and they add crunch to granola or a yogurt bowl. The soybean-dusted dates are lovely with a scoop of vanilla ice cream or tucked into a lunchbox.

유기샘의 바삭대추는 국산 대추의 씨를 손으로 빼고 볶은 견과를 통째로 넣는 데서 시작합니다. 바삭하게 말려 얇게 썰면 단면마다 대추 고리 안에 견과가 박혀 있어요. 아몬드 바삭대추는 달콤하고 고소하며 가볍게 바스러지고, 브라질너트 바삭대추는 한결 진하고 부드럽습니다. 대추농축액만 조금 더해 단맛은 온전히 대추에서 옵니다. 유기샘이 특허를 받은 방식입니다.

대추야자 콩고물은 바삭대추와 정반대의 식감을 냅니다. 바삭한 대추 대신, 꿀처럼 달고 속살이 은은하게 비치는 튀니지산 데글렛누어 대추야자에 볶은 아몬드를 하나씩 품게 했어요. 대추야자는 말랑하고 쫀득하게 남고, 겉에 묻힌 국산 볶은 콩고물이 인절미처럼 익숙하고 고소한 마무리를 더합니다.
