New York Strip

The New York strip steak is a classic and popular cut of beef, cut from the area of the cow below the backbone.  It consists of a muscle that does little work, making the meat tender, lean, and typically boneless.  NY strips don’t need much to make them great.

뉴욕스테이크라고도 불리우는 뉴욕스트립은 모양이 꼭 뉴욕주 같이 생겼다고 해서 그런 이름이 붙여졌지요.  한국에서는 흔히 ‘채끝살’이라고도 하는데 등심과 연결된 부위로 안심을 에워싸고 있어 두 부위의 장점을 모두 가지고 있다고 볼 수 있습니다.  그래서 대표적인 스테이크용 고기로 꼽히는데 미디엄 레어로 구워 드시면 소고기 본연의 향과 맛을 즐기실 수 있어요.  근섬유다발이 굵지 않아 곱고 부드러운 고깃결의 색감을 즐기실 수 있답니다.

Tips

• If you grill the meat when it’s too chill, you would taste a little too dry steak.  Leave it at room temperature for 15-30 minutes before you cook.
• Season a few minutes before you start cooking.
• If you cook it on the stovetop, use a thick pan.  Cook it hot and fast with no oil to start and some butter to finish.
