Freshly Milled Heritage Rice, Direct to Your Bowl
Gawaji No. 1 is a uniquely chewy rice cultivated in Goyang, Gyeonggi Province—home to Korea’s first recorded rice cultivation. It’s prized for its sticky-soft texture and subtle shine, even when cooled. With lower protein and amylose, but higher amylopectin content, it delivers a texture between short-grain and glutinous rice—perfect for everyday meals and lunchboxes alike.
At Kim’C Market, we mill this rice fresh in New York City, just before shipping. You choose your preferred milling rate: brown rice, 30%, 50%, 70%, or white rice. We recommend enjoying within 45–60 days of milling for peak flavor.
Store in the refrigerator, in an airtight container, away from strong odors. Because we skip harsh fumigation, natural rice eggs may hatch if stored warm or humid—another reason to keep your grains chilled for both safety and freshness.
Cooking Tip: Add enough water to cover the rice by ¾"–1", boil uncovered, then simmer covered for 10 minutes. Let rest off heat for another 10 before serving.

Gawaji No. 1 is a heritage rice developed by the Gyeonggi Agricultural Research Institute and Goyang City. It honors Korea’s earliest farming roots and is cultivated in limited quantities. Known for its smooth texture and excellent flavor retention, it’s a favorite for gimbap and sushi. As with all great rice, half the flavor comes from the breed—and this one delivers confidently.
