Slow-simmered, cut small

DAN.ZARI's Signature Cube Yanggaeng is the workshop's signature dessert. Yanggaeng is a Korean jelly made from sweet bean paste and agar; DAN.ZARI builds each flavor on grain bean paste and agar with its own ingredient folded in, then simmers it low and slow for a long time until it sets. The texture is the point: a slight chew first, then a soft melt, with a gentle sweetness that lets the citron, sesame, or matcha come through.

Nine flavors, old and new

DAN.ZARI's cube set moves from the familiar to the unexpected. Red bean and black sesame are classics of the Korean tea table. Citron and matcha bring out the aromatic side of the box. Lemon ginger, coconut, berry, chestnut vanilla, and sesame caramel take yanggaeng somewhere newer, the way a chocolatier might work through a box of bonbons. One of each means every bite is a little different.

How to enjoy it

Serve the cubes cool, straight from the refrigerator, with green tea, a roasted grain tea, or black coffee. Taste them from lightest to richest, starting with citron and matcha and ending with sesame caramel. They also make an easy finish to a dinner party, set out on a small plate the way you would petits fours or squares of good chocolate.

단자리의 시그니처 큐브양갱은 단자리를 대표하는 디저트입니다. 양갱은 앙금에 한천을 넣고 졸여 굳힌 한국의 전통 과자로, 단자리는 곡물 앙금과 한천에 맛마다 다른 부재료를 더해 오랜 시간 뭉근하게 졸입니다. 식감이 핵심이에요. 처음엔 살짝 쫀득하다가 입안에서 부드럽게 녹고, 단맛은 은은하게 물러서 유자나 참깨, 말차 같은 재료 본연의 맛이 앞에 나옵니다.
