Six of loin, two of striploin — all Grade 1++

This set leans into loin but pairs it with striploin for contrast. The six packs of grilling loin are evenly marbled and cut thick, so they stay tender and flood with juice over high heat; the two packs of striploin are firmer and springier, their marbling running in ribbons along the grain. Everything is Grade 1++, the top marbling grade for Korean beef, raised antibiotic-free on Sulsung Farm's pasture and processed in-house, so the quality holds pack to pack.

How to cook it

Cuts this good ask for restraint. Bring the loin to room temperature, season with just salt and a little pepper, and sear over high heat or charcoal, turning once, until a crust forms and the inside stays rosy; rest before slicing against the grain. Grill the striploin the same way. Serve Korean-style with ssamjang, garlic, and lettuce for wrapping, or Western-style as steaks with nothing more than salt — at Grade 1++, the beef needs no help at all.

Sulsung Farm has raised Korean hanwoo since 1976, under a single principle: safe and fresh, from pasture to table. As calves, the cattle free-graze across roughly 250,000 pyeong of open grassland in Hoengseong, Gangwon and Icheon, Gyeonggi — moving between wide meadows and roomy barns rather than living in confinement — and that slow, open start builds hardy, strong-framed cattle.
