Here's our general response to the question you raised. It's simply because our farmers use no or minimum amount of pesticide when they are growing rice. The black dots are simply marks made by stink bugs when they pierce rice grains to feed. These spots are caused by the bug's saliva which interferes with the grain's coloring. Although the appearance might be affected, it does not impact the safety or quality of the rice. Because we freshly mill our rice, you won't have any mold. There are many reports and studies backing up our response above. Here we share one: Rice Quality Affected by Stink Bug Feeding. This report published in 2004 by the Texas A&M AgriLife Research discusses how stink bug feeding impacts the appearance of rice but confirms that it does not affect the edibility or nutritional quality of the rice. The fact that our farmers are not using or using a minimum amount of pesticide is the main contributor to those stink bug cases. Bad quality
I always order Korean rice from this store, but the rice I got last 2 times are not fresh. I ordered two 15-pound bags, and both of them are the same. Every time I cook rice using 3 cups, I have to pick out the black spotted rice before cooking. How can we know the crop year of the rice?
Korean rice is harvested once a year - normally between mid/late September and early November depending on varieties. Then they need time for drying.
Because we mill fresh upon a customer's order - even when you order brown rice, the crop year matters not so much. It will
always taste fresh and good. Michelin-starred restaurants still serve some of our crops from 24 months back as it's safe to consume.
Do we have to store our milled rice in the refrigerator?
We also grew up keeping our rice in the pantry, but it turns out the rice that's sold in grocery stores is milled a while back and kept at room temperature, so there's no need to keep it in the fridge.
We learned from our rice producers that once rice is milled, it's like it is freshly produced (the protective bran has been milled off), therefore we offer smaller batches to enjoy it fresh and why we recommend
refrigerator storage. Please note, even our brown rice is milled at a very low rate, to provide fresh brown rice with much of the bran still on the rice.
Does this rice come with cooking guidance?
Yes. Each order includes detailed cooking instructions, and we recommend storing in an airtight container in the refrigerator to preserve freshness and prevent natural rice eggs from hatching due to minimal pesticide use.
