The crop of rice dictates half of the bap’s taste. Historically, rice from Yeoju Icheon (여주 이천) in Gyeonggi Province has been perceived to be the best and served to the monarch. Then Japanese rice crops such as Koshihikari took over the top while traditional Korean crops from the region started disappearing.

Dr. Yuhyun Cho at a Korean government agency dedicated 20 years to develop a Korean rice crop that would taste better than the current titleholder. Golden Queen III is that product and he is the patent owner. Any rice brand that has the crop pays him the loyalty. Hyangminara is the brand created at his farm lab in Suwon, Gyeonggi Province.

Taller crops taste better, but are susceptible to wind leading to lower production. Golden Queen III is very tasty but short enough to stand against the wind which gives farmers higher financial incentives. Now farmers in Yeoju and Icheon are farming Dr. Cho’s crops.

쌀의 등급은 특, 상, 보통 등 세 가지로 나뉘어요. 변질되거나 쌀이 깨지지 않은 완전립의 비율이 95% 이상이면 “완전미”로서 특급을 받습니다. 도정 후 공장에서 나올 때는 특급이지만, 멀리 미국까지 오는 동안의 유통과정에서 혹시 손상을 입을까 싶어 상급으로 조정됩니다. 물론 외형적인 기준일 뿐이지만요.

Golden Queen III needs 10-15% less water than other rice crops as its grain is smaller and more consistent. We suggest you store this rice in the refrigerator or a cold, dry place once it’s opened. Kimchi Refrigerator is the best place to store.
