Artisanally hand created by guksu master Kim Hyun Kyu, these colorful noodles are created with carefully selected chives, sweet pumpkin, rice, beets, and black rice to represent wu xing, also known as five elements. 

- Chive Noodles: 67% wheat flour, 20% chives, 10% rice, 2.7% sea salt

- Sweet Pumpkin Noodles: 67% wheat flour, 20% sweet pumpkin, 10% rice, 2.7% sea salt

- Beet Noodles: 67% wheat flour, 20% beet, 10% rice, 2.7% sea salt

- White Rice Noodles: 77% wheat flour, 20% rice, 2.7% sea salt

- Black Rice Noodles: 77% wheat flour, 20% black rice, 2.7% sea salt


Cooking instructions: Put noodles in boiling water for 4-6min, stirring occasionally. Drain the noodles and rinse with cold water. Mix with toppings or simply add perilla oil and sea salt to taste the distinct flavor of each Five Colored noodles. 

Storage: Refrigerator storage. Store in cool dry place, avoid direct sunlight.

Description

Guksu (국수) is Korean noodles made with grains such as wheat, rice, or potato. Traditionally guksu is served only on special occasions or upon arrival of a special guest. 

Master Kim does not add any chemicals in the process, instead opting for natural ingredients to achieve the vibrant colors representing wu xing, the five elements of blue, red, yellow, white, and black. Because each noodle is hand made with its own unique ingredients, the aging process differs between them as well. 

These noodles can be used for diverse set of dishes such as bibim-guksu (spicy mixed noodles), kong-guksu (cold soy milk soup), or even as a pasta noodle. Historically, noodles within Korean cuisine were flavorless and used as an accompaniment with other dishes. With these Five Colored Noodles, you can see how the taste of a well-made, healthy Korean noodle can be enjoyed as its own standalone meal. 

국수는 ‘면(麵)’을 일컫는 순우리말이에요.  예전에는 경사스러운 날이나 중요한 손님이 오셨을 때에나 내어 오던 귀한 음식이 있지요.  

소개하는 거창한국수는 여러 면에서 특별합니다.  분말이나 인위적인 색상을 넣어 빨리 만드는 대신 부추, 단호박, 쌀, 비트 그리고 흑미를 통으로 갈아 청색, 황색, 백색, 적색, 흑색의 국수를 만들어 냅니다.  직접 손으로 반죽해 한국의 전통색인 오방색을 구현하지요.  재료마다 반죽과 숙성 시간을 달리 하고 품질 좋은 밀가루, 불순물을 제거한 천일염을 사용해 만들기에 생산을 많이 할 수도 없어요.  정성이 많이 들어간 만큼, 식재료의 기질을 살린 맛과 향이 입을 무척 즐겁게 합니다.    

면발이 쫄깃하고 맛이 좋아 비빔국수, 콩국수 등으로 다양하게 사용할 수 있는데요.  면이 잘 퍼지지 않아 파스타면 대신으로도 자주 이용합니다.  거창한국수의 면 맛을 가장 잘 느껴보려면 들기름과 천일염으로만 비벼 드시길 추천합니다.  원료가 좋아 들기름과 천일염만으로도 충분히 맛있어요.  이제 국수를 육수와 양념이 

아닌, 면의 맛으로 즐기세요.

거창한국수는 워낙 생산량이 적고 한국에서도 유명인들 사이에서는 이미 잘 알려져 해외로의 판매에는 관심이 거의 없었습니다.  한국에서도 판매를 할 수 있는 곳이 한 손에 꼽힐 정도였으니까요.  전화와 이메일, 문자로 여러 차례 이야기를 나눈 후에야 소량을 확보할 수 있게 되었습니다. 

테이스팅을 위해 오방색국수를 네 가지 요리에 사용해봤는데요. 바이어의 말처럼 기존에 알던 국수들과는 확연히 달랐습니다.  미국에서도 여러 분들과 특별한 국수를 나눌 수 있게 되어 기쁘네요.

These buckwheat noodles are crafted by Kim Hyun Kyu who started Grandnoodle in 1987. He thought guksu made only of wheat did not have any taste or enough nutrition and became committed to producing nutritious noodles with seasonal seasonal ingredients. After years of experimentation, he landed on a recipe with carefully selected chives, sweet pumpkin, beet, rice, and black rice.

Grand Noodle wasn’t planning on selling overseas; only a small amount can be produced at a time and there is a growing demand for these noodles, especially amongst Korean celebrities. However, Kim’C Market was able to establish a special relationship with Grand Noodles and exchanged multiple emails, texts, and calls to request these special noodles for you!


거창한국수는 1987년 경상남도 거창에서 출발했어요.  국수의 주성분인 밀가루 그 자체로는 맛이 없고 한 끼 식사로 필요한 영양분을 채우기에 부족하다고 여긴 김현규 장인이 ‘그 자체로 맛있고 건강에 좋은 국수를 만들자’란 신념으로 시작했지요.  


숱한 시행착오를 거친 끝에 국수에 잘 어울리는 건강한 식재료, 배합비, 배합 방법을  찾아내 영양가 있는 국수를 만들어 냅니다.  겉보기에만 고운 색감을 가진, 억지로 색깔만 첨가한 다른 국수들과는 맛과 영양, 정성에서 큰 차이가 나는 국수입니다.
