Gaia Fermented Anchovy Sauce 

If you want to become better at cooking Korean, knowing how to use Gaia’s Fermented Anchovy Sauce well could be your answer.  Tasting similar to the fish sauce readily used in Southeast Asian cooking, the anchovy sauce can be substituted for soy sauce or salt to give a different and deeper umami taste.  These types of fish sauces, referred to as aekjeot in Korean, are made with anchovies as well as with tuna and sand eels.  The seafood protein is broken down into amino acids during the fermentation process, and you end up with explosive savory flavors with a hint of sweetness.  Adding just a tiny bit to your cooking will go a long way in producing results.

Gaia Foods’s Fermented Anchovy Sauce is exceptional because it uses the first batch of anchovies caught at high tide in Korea’s South Sea, sprinkled with 3-year-old brine-drained Shinan sea salt, then aged for 3 more years in earthen pots.  Their secret is in fermentation in breathable earthen pots, called onggi in Korean.  The bacillus bacteria produced in such an environment have excellent protein breaking-down properties for a tastier yield.  As anchovies and salt are the only ingredients that go into making the sauce, it goes without saying that the quality of the ingredients is crucial.

  

= How to Make the Best of Fermented Anchovy Sauce =

Gaia Foods’s Fermented Anchovy Sauce is a seasoning and sauce that goes well with most Korean dishes.  You can season and deepen the savory tastes of jjigae, soups, and stews.  It is one of the essential ingredients when making kimchi.  The sauce retains its flavor even when mixed with other foods while eliminating unwanted fishy or oil smells and softening foods.  And what’s more, it has a long shelf life. 

Soups

Pour a bit of the sauce instead of your usual salt or soy sauce.  You will notice your soups will have a richer, more savory taste.  Use for miyeokguk (seaweed soup) that is super easy to make.  Soak, then drain the miyeok (seaweed), stir-fry them with sesame oil in a pot, season with garlic and the anchovy sauce, then pour the stock and boil.  Voila, your miyeokguk is done. 

Kimchi

You simply cannot make kimchi without a good anchovy sauce. Using Gaia Food’s fine quality fermented anchovy sauce, you know you will have an exquisitely tasting kimchi.  And those types of kimchi that are more watery, like mul or nabak kimchi, will have a far deeper flavored juice.
