Kim’C Market Tip:

  • It only takes 3 minutes to cook these noodles.  Boil water.  Put noodles into the boiling water and take them out 2 min 30 seconds later.  Run cold water into the noodles.  Add boiled eggs, sliced vegetables like cucumbers, cut gim (seaweed), and drop some sesame or perilla oil.  Sprinkle black seeds on top.  
  • 면가원 수연소면은 끓는 물에 2분30초간 넣었다가 빼 냅니다.  찬물을 넣고 다시 끓여야 하는 일반 국수들과 달리 한 번 삶아서 간편하게 요리할 수 있어요.  이후 찬물에 몇 번 헹군 후 드시면 됩니다.  삶은 계란, 썰어 놓은 야채, 김 등을 넣어 함께 드시면 간단하고도 맛있어요.  들기름과 소금을 곁들이면 면의 맛을 잘 느낄 수 있어요.  검은깨나 참깨를 뿌려 드시면 풍미가 더 드러납니다.

Myeon Ga Won was founded in 1975 by Hee Tak Kang who dedicated his entire life to perfecting the art of hand-pulled noodles.  The former military officer who lost both hands during the Korean War learned the hand-pulled thin noodles, suyeon somyeon.  For a long time, his noodles were only for export and gifts for wealthy individuals.  After many years, Myeon Ga Won still produces only suyeon somyeon.

Description

Myeon Ga Won’s Suyeon Somyeon (수연소면 “hand-pulled thin noodles”) is a delicate art.  It takes over 28 hours, 12-step-process and 8-resting-stage to create these luxurious hand-pulled noodles.  Whole wheat flour dough is kneaded, rested, and pulled 8 times by hands to get to beautiful thin noodles.  It’s chewy, silky smooth, and doesn’t soggy quickly.  Enjoy these next-level noodles in hot or cold soup or as cold noodle salad.  Enjoy your selections of four flavors -Original, Mugwort, Black Rice, and Soba. 

수연소면은 손 수(手), 늘일 연(延)자, 말 그대로 손으로 반죽을 늘인 소면이라는 뜻이에요.  기계 소면과는 달리 한올 한올 손으로 늘려 만들지요.  한 번에 늘릴 수는 없으니 숙성을 시켜가며 서서히 늘려가는 과정을 거칩니다.  


소개하는 면가원의 수연소면은 스물 여덟 시간 동안 총 여덟 단계의 자연 숙성 과정 뒤에야 만들어져요.  순밀을 반죽하고 치대어 압축하고 자연 숙성한 뒤에는 반죽을 길게 늘이는 숙성과 늘임을 계속하지요.  밀가루로 만들었는데 밀가루 냄새도 없고 계속 면끼리 잘 붙지도 않아요.  숙성면이라 면이 무척 부드럽고 쫄깃한 식감을 즐기실 수 있지요.

So much better than common noodles at Korean markets

I am a big fan of Kim'C Market to begin with. My wife bought 2 flavors (Black Rice and Original) and we both loved them. We felt this noodles give so clean taste. We only added regular salt and Chung-O perilla oil that we have bought before. We tried those two, and the remaining two. Our favorite is Mugwort, but it doesn't mean the other three are bad. They are equally excellent, and Mugwort pleased us the most. Thank you.

Super easy, and delicious

I followed the simple instructions. Put noodles in boiling water for 2 min 30 secs. Rinse the noodles with cold water. Pour perilla oil and sprinkle black sesame seeds (both are from Kim'C Market). Place a boiled egg. The meal was so simple. And I enjoyed the every bit of the noodles. I tried Mugwort and Original. Both were superb.

Uh, oh. These are gonna be a problem...

Last night, I used these noodles (Original) for the first time to make My Korean Kitchen's 'Spicy Cold Kimchi Noodles' and, oh my goodness, it was such a delicious meal! Added bonus: it was super fast to prepare. If I hadn't used the last bit of my HaeDamChon kimchi to make it, I would have absolutely made a second bowl right then and there, they were so good. As it was, I rushed back to Kim'C in order to send some of these noodles - as well as Jookjangyeon's 고추장, and Chung-O's roasted black sesame seeds and roasted sesame seed oil - to my brothers, so that they can also have a go at making the recipe. I only wish I could have sent them the kimchi too... Anyway, back to the noodles. Their texture is fantastic - I cooked them for 2 minutes, rather than the recommended 2 1/2 minutes and thought they were just perfect. This evening, I tried the Buckwheat variety with a simpler sauce (sesame oil, green tangerine vinegar, soy sauce, a dash of sugar and toasted black sesame seeds), topped with some julienned cucumber and a soy marinated egg. Now, I am back here again, ordering many more packs of the noodles (for myself this time) and writing this review. Super tasty, fast to prepare, excellent texture - I look forward to experimenting more with this somyeon this winter (and revisiting the 'Spicy Cold Kimchi Noodles' recipe as soon as I can lock in another HaeDamChon kimchi order)! Highly recommend.
